What a Great Day!

Today has been a great day. 

Woke up rested not feeling tired and was able to get in my workout without getting a headache. :)  This means my thyroid med level if finally back to the correct level. :)

We had a busy school day.  David got involved in his preschool PBS computer program and just keep going and going.  The only thing that got him to stop was telling him we needed to go outside to play and get in our walk.  He went out had a lot of fun but went right back to the computer as soon as we got back in.  He has finished a level in French, logic, Seasons & Weather, Reasoning & Problem-Solving, and preschool Geometry.  It's great to see him having so much fun while learning.

David wanted pancakes with muffins and bacon for breakfast. I got the bacon cooking then David helped me mix up the yummy gluten free pancakes and  yummy whole grain gluten free apple cinnamon muffins with flaxseed. He had a blast.  David seems to enjoy food that he helped cook more than anything I cook for him. :)

Katherine was working on her computer math program and was determined to reach the next level of the lesson she was working on.  She worked really hard for over 2 hours on just math and achieved her goal.  GREAT JOB Katherine!  My daughter's least fav subject in school is by far math so anytime she puts in extra time on math I get excited :)

Katherine is now busy cooking her latest creation.  I asked her to write down the things she does as she goes along so I'll have a recipe.  She's making Cornish hens stuffed with apples and rubbing all sorts of spices on the inside and outside of the hens.

Since I've started the first part of my raw food diet I told her I'll be freezing mine and eating it in 7 days :)  I can't wait.  It looks great!

    The hens were stuffed with sliced apples and the apples were seasoned with
    sage and bay leaves so that the apples would have that savory factor.
    The hens were smothered in extra virgin olive oil and then I
    put on a dry rub of cinnamon, pepper, salt, paprika, nutmeg, and just a hint of ground ginger.
    I just thought that would taste good so I thought I would try it.
    And no mom just because I made a new recipe doesn't mean I'm going to post it to my blog.
