My scale lies! and "Real' French Fries

My scale lied :(
Today it shows my over all weight loss from Sunday has dropped 8.2 pounds but it also shows that I have gained no muscle :(  It says I have lost 2.19 pounds of fat and lost 3.18 pounds of muscle and lost 2.83 pounds of water. 
I'll wait till tomorrow and see what it says tomorrow.
But regardless of what the scale says I am sleeping better.....last night my sleep efficiency was 85%! Really good for me!

It's possible that it will show things very different by Sunday but I'll just wait and see. 

Yesterday I had onion.  I like onion but know from many different allergy tests that I am allergic to it and really should have replaced the onion in the recipe with leeks.  Leeks taste just like a mild onion.

After eating and getting a tummy ache I realized I shouldn't have eaten the onion....but that's what I always say after eating a yummy onion :)

It is possible that the numbers on the scale are being effected by the response my body is having to the onion.  I'll have to wait a few days to see just what is what.  Today is day 5 of my 7 day diet so it's almost over.  I'll finish it up and then take a review of the final results as well as take into account how I am feeling next week ....If my weight pops back up then I will know I really just lost a lot of water.  bummer  :(

I am quite bummed by the scale numbers today but I have to remind myself that eating the onion yesterday could be causing the confusion in my body today.
After all about 2 minutes after getting on the scale I thought it must have had a bad reading and so I got on the scale again and it said I had lost another pound of muscle.  I know that's not possible to do in 2 minutes so I have to go with the theory that the onion has caused a bigger response in my body than I expected.
 I'm also bummed today about my wrist still being to bruised and hurting to much for me to even think about trying to wear my wrist weights yet. it feels like I might have bruised it all the way to the bone.   :(  I bet I will NEVER fall asleep with them on again!

I did get in my walk yesterday and over 14,000 steps yesterday as well as my toning and yoga yesterday.  That's something to be happy about.  Yesterday I was flying on cloud 9 thinking I had lost over 14 pounds of fat and today I'm having to keep myself motivated and not getting totally bummed out over what the scale says.  I have to remember that my weight is down from 203 to 194.8 since Sunday and down from 217 in January.

Today will be a challenge keeping myself motivated and not throwing in the towel saying it's not worth the work.  I know I can keep my chin up and keep going.  I just need to wait and see what the scale says in 48 hours after the onion reaction is most likely over.
If I can make it through today without throwing in the towel I know I will be able to achieve my fitness goals.

Yesterday I wasn't hungry all day till around 6pm.  Maybe it was just because I was soooo excited about losing over 14 pounds of fat and I was looking forward to how much I would lose by the end of the week.  Or maybe it was that the detox diet is working and my body is actually resetting and getting rid of a lot of the yuk built up in there.  I don't know.  I'm just going to try and push through at this point and see what happens next week.

Yesterday I made 'New Gazpacho' for dinner
Ingredients:
2-3 ripe medium tomatoes, or 1 and 1/2 pints of cherry tomatoes ( I used 3 tomatoes)
5-6 sun-dried tomatoes (soak 1-2 hours in advance)
1/2 red bell pepper
1/2 cup fresh basil, chopped
1 cup cucumber
Juice from 1 lime
1/4 cup chopped red onion (optional)  I used a whole red onion

Directions:
First blend the tomatoes and sun dried tomatoes. Then add in the other ingredients in the order listed, blending just enough to be soupy, but still chunky.

Try: Sprinkling your favorite sprouts on top for texture and a shot of added nutrients.  ( I added sunflower sprouts)

It made 6.5 cups of cold soup.  I was not able to eat all of it as it had to much onion making it a bit to spicy.  It also hit my tummy like a brick giving me an upset stomach for a bit.


Ok now that I'm finished being bummed about my scale numbers this morning I have to tell you about something that made me really smile yesterday.....

The night before my son had asked me to make him some french fries but I didn't want to cook any so I had bought the kids fast food french fries.
Yesterday morning my son asked me if I could make him 'real' french fries.  I asked him if he wanted some more Jack-in-the-Box fries and he said, " No Mom! I want some REAL french fries!  You have to make them because they taste better!"  Now how in the world could I refuse making him some fries after that!?!?

I planned it so I was making the fries while I was drinking my meal so that I wouldn't be tempted to eat any.
I also made them the way I use to when my daughter was younger.  I never fried anything then as I was trying to keep her healthy....not sure when I fell off that bandwagon!

David helped me cut up the sweet potatoes with the potato cutter.  Then we put them in a bowl and put a tablespoon of olive oil over them.  We mixed them around to they all had a light cover of olive oil. 
We put them on a baking sheet covered with parchment paper (really keeps things from sticking) and baked them for 30 minutes at 370 degrees...(you have to watch and when they get crispy on the outside they are ready) it's always around 30 minutes for the size I cut the potatoes.  They say crisp as long as they are warm but get soft when cooled off.  The kids like them both ways.
David was VERY happy to have his 'real' fries and I was very happy I was able to make them without eating any of them. :)

Shortly after he had his fries he went to bed for the night and there were a few fries still on his plate in the living room where he had been eating.  I asked my daughter to please please pick up the plate as I didn't know if I could make it all the way (about 8 steps) to the kitchen without eating them.  She smiled, laughed and picked up the plate....and ate the leftover fries.  this morning the kids have already asked for more fries cooked the 'right way'
 
Turns out that frying the fries over the past year wasn't as special as I thought.  The kids like the baked ones better.  My daughter made a comment about how she has always said,'My mom might not be a great cook but she makes the best french fries in the world." 
Baking them with so little oil and using sweet potato rather than white potato really does make them very very healthy and I think I need to start making them much more often.  :)  I had forgotten how much she really enjoyed baked fries. 

So that's my bummer day and my great day...my kids have done it again...after typing about the fries I'm feeling much better and am ready to tackle the day again!  :)

So I'm off to spell check and then make those sweeties some more 'REAL' french fries.  :)

  1. You spell check? I never bother lol. I remember when my daughter was younger and it was mostly just the two of us. I cooked SO healthy. We ate hardly anything processed (and I was at a very healthy weight too!). I made sweet potato fries like that too and she loved them. Then it got to where I was working full-time (in my home but still) plus had her baby brother and before you know it I'm buying bags of fries - still baked but coated in artificial everything. I'd like to get back to how it was too.

    As far as your scale - what a bummer to see that but you know it could be the onion!!! I can't handle aspartme at all and whenever I drink or eat anything with aspartme I swell up like a balloon - I can even see it in my fingers/toes! Even my throat swells up if I have too much. So I bet it could really play with the numbers on the scale.

    I know it's said all the time but you and I both know the best indicator is how you FEEL!
